Formaggio fresco prodotto con tre latti (vaccino, ovino, caprino). Forma piatta con superficie rugosa ricoperta da lieviti nobili bianchi. La struttura si presenta umida e tenue, con un gusto leggermente acidulo e aromi di panna fresca.

Ideale come aperitivo con vini bianchi aromatici, cugnà, frutta fresca o secca.
