Fresh cheese made with three kinds of milk (cow, goat and sheep milk). It is characterized by a flat shape and a wrinkly rind with noble white yeasts. The texture is humid and tenuous, with a slightly acidulous flavor and aromas of fresh cream.

Pairings

Ideal as an aperitif with aromatic white wines, cugnà, fresh or dried fruit.
