This cheese is made in a small artisanal dairy which is situated in the Stiria Austrian region, famous for its remarkable high-quality cheese production. The dairy utilizes a selected “glaucum penicillium roqueforti” which allows the blue veins marbling process to take place. The texture is buttery and friable, with a flavor between sweet and bitter and aromas of undergrowth.
