Dolcissimo

The form is cut in half and emptied, the paste of the cheese is mixed with crème fraîche and sweet wine Gewürztraminer and then back into shape and aged a few days. The texture is buttery and creamy, with a flavor between sweet and bitter.

Pairings

Ideal as a pre-dessert served with a toasted white bread slice and sweet wines or sparkling wines.
