In the German language, "Deichkase" literally means "the dam's cheese" and the reason why this product takes this name is that the cheese-factory in which it is produced, is located extremely close to the dams of the Frisia region, on the Northern Sea, for this reason, the pastures where they fees the cows are salty. The curing cellars are situated underneath these dams and the peculiar sea air and a unique climate allow every wheel to mature and cure in the best way possible. The texture is compact and friable, with salty aromas.
