Cheese made from Algunder dairy, aged inside typical pits from Sogliano al Rubicone in Romagna (Emilia Romagna) from our friend the affineur Renato Brancaleoni. The texture is friable and compact, with a sapid and spicy flavour and intese aromas of truffle, earth and cellar.
