Once upon a time in the Langhe region it was custom to cured cheeses in the so called “crutin”, small cellars carved out of tuff caves where they would hang up the wheels using small ropes so that they could both get all the air they needed and stay away from rodents. The texture is compact and friable, with intense aromas of cellar.
