Otello
His name is a tribute to Otello, “The Moor of Venice”, the protagonist of the homonymous tragedy of Shakespeare. The cheese has a typical appearance of “canestrato”: on the rind you can see the lines left by the basket where it matures. The refinement is made with vegetable coal and the cheese matures for 3 months in the Bunker. The texture is compact and soluble, with a sweet and slightly acidulous flavor that recalls aromas of cellar, berries and balsamic.
