This cheese is known to be one of most dated and typical of the Lombardia region cheese-making tradition. The Crescenza belongs to the "stracchino" cheese family and its name may derive from latin "crescentia", which means "to grow, expand" and that is because during its production the curd grows in volume, it "rises". The texture is soft and creamy with a delicate flavor.
