Sissi
Washed-rind cheese with a tendency of becoming creamier in the area just below the crust, porcelain white. The farm in which it has been produced is situated at an altitude of 1.100m in Valles, a small village in the Rio di Pusteria region. The farm animals consist of 160 white goats which are a part of the 'Noble German' breed. The texture is soft and creamy, with a slightly acidulous flavor.
Pairings
Excellent as an entrée with sparkling wines or white wines like Riesling.
