Silva

This soft cheese from the Eggemoa farm in Selva dei Molini at 1,300 metres is shaped during the ripening process using a strip of spruce bark. As the cheese matures, it takes on the resinous notes of this finishing technique, which wonderfully complement the red-smeared flavours of the cheese.
