Pfefferkas

A farm cheese produced by the young cheesemaker Stefan Köhl at an altitude of 1,360 metres in Deutschnofen in the Dolomites. The green pepper is mixed into the curd and gives the cheese, with its vibrant curd perforation, a herbal aroma, and the subtle sharpness creates a refreshing interplay with the buttery flavour.
