Livarot is one of the oldest cheeses in Normandy, originally from the Pays d'Auge department. It is also called "Colonel" because during processing it is wrapped with five blades of sedge ("Typha latifolia" grows in abundance in the marshes and ponds of the region), reminiscent of the insignia of a high military official.
