Elzenbaumer

This semi-soft semi-hard cheese with a washed rind and cream-coloured paste is produced on the Neuhaushof farm at 1,400 metres in Acereto, Campo Tures, South Tyrol. It is a family-run farm where young farmer Stefan has taken over the business from Lambert and Christl and continues to produce this cheese in an artisanal way from the farm's own raw milk.
