The ‘little devil’. This small soft cheese with a red smear rind is coated with chilli (peperoncino). This refinement gives it a distinctly spicy flavour and forms an interesting contrast to the fattiness of the cheese. Chilli also preserves the surface of the cheese thanks to its antibacterial and antifungal properties due to capsaicin.
