"Crutin" are small tufa cellar vaults where the farmers of the Langhe used to store their supplies. This cheese, which has small truffle slices, has a crumbly consistency. This makes it concretely reminiscent of the former, almost magical cellars and is why Beppino Occelli christened it so. A special cheese that opens up a veritable firework of flavours.
