This refinement aims to soften the somewhat sharp notes of the blue cheese with fruity aromas. Therefore, this cheese harmonises particularly well with fruit, a glass of sweet wine or a distillate and is excellent as a pré-dessert.  The natural fat content of the cheese is balanced by the acidity of the candied fruit. The different flavours are in wonderful harmony, yet you can taste the character so typical of blue cheese. The result is a modern, balanced interplay of citrus, spice, bitterness and sweetness.
