The matured mountain cheese with the refinement of Lagrein marc is characterised by a distinctly tender-elastic, yet crumbly consistency and by animal notes, but also notes of caramel, red wine and dark chocolate - a mix of aromas that integrates wonderfully into the juicy cheese.
The refining process in the wine marc dates back to wartime. At that time, the valuable cheese was hidden under the pomace to protect it from the soldiers' forays.
